#11: Easy, Healthy Eating for Diabetes with Toby Amidor, MS, RD, RDN, FAND

Today is an extra special episode because I get to speak with Toby Amidor, MS, RD, RDN, FAND.

You may not know this, but the driving force behind starting Reshape was my dad. He was in what I call the gray zone of healthcare...overweight and sedentary, with high blood pressure and type 2 diabetes. As a geriatric physical therapist I was worried about his health trajectory.

I created Reshape out of a deep desire to help my dad and others like him lose weight and prevent diseases like type 2 diabetes and high blood pressure that are becoming all too common.

That’s why I was so excited to speak with Toby in this episode. Her new cookbook, The Create Your Plate Diabetes Cookbook is in alignment with my mission and I’m sure will help simplify cooking for many diabetics.

Besides that, I’m always looking for good resources for my clients and course members because I know meal planning, and creating healthy meals can be a difficult habit to adopt.

The simpler, the better, and Toby ascribes to this philosophy, too.

Here’s a recap of what I talk about in this episode.

>> Point #1: First, Toby talks about the Create-Your-Plate cookbook she has coming out March 17th, 2020 and takes us through the 5 steps to structure a healthy diabetic meal.

>> Point #2: Next, we talk about nuances with the Create My Plate method for eating breakfast, snacks, appetizers, desserts, eating out, etc.

>> Point #3: Lastly, I asked Toby to give her top advice for preventing or better controlling type 2 diabetes.

Let’s take a look at a few highlights of this episode...

>> [05:28] What are the basic nutritional principles you teach to someone who has diabetes?

>> [08:15] There is a lot of information out there. I want to know why you wanted to create this new cookbook and address what gap does it fill in the current information that’s online?

>> [23:36] What are some of your favorite tips for lightening up dishes?

>> [29:06] Can you give us some tips for incorporating the Create My Plate method for breakfast when we are having items that don’t always go on a plate?

>> [40:15] What’s one piece of advice you would recommend people do to prevent or better control type 2 diabetes?
